Is there any screen that shows and editable on player level a player's positional ratings? e.g messi as trequartista %75 (just an example)

Yes there is a screen like this, open any player in FMRTE and click on Scout Information on the left side.

To do this you must edit their attributes, you can highlight the attributes most important to each position and role and this will increase their rating at any given position.
